In the Bavarian Vorspessart, more precisely in the Kahlgrund area, lies our home, our farm. This fine distillery has been a family business since 1879, when our great-great-grandfather Johann Simon already distilled fruit brandies. Our manufactory produces distinctive, authentic, high-quality distillates. We attach great importance to regionality & sustainability.
In our portfolio we offer unique spirits, which have won many awards from trade press & experts. From classic fruit brandies, liqueurs and herbal spirits to gin, German rum and whiskey. The landscape forces us to create something special.

As a family business, everyone involved contributes their passion and personal enthusiasm to creating an all-around harmonious product. With the education as winemaker and technician for viticulture and cellar management as a basis, Severin Simon's skills developed into real passion & dedication. Today, he is a successful and award-winning master distiller. In addition to tending the vines in the farm's vineyards and the wines in the cellar, he devotes his entire heart and soul to the craft of distilling.
Susanne Simon, a qualified Sommelier for fine spirits, is an indispensable part of this fine distillery. Especially when developing new distillates and striving for the highest quality, her knowledge of typical taste & smell patterns as well as olfactory and gustatory sensory analysis is pure gold. Her distilling course at the University of Hohenheim, which she successfully passed in 2017, shows that standing still is a foreign word at Simon's Feinbrennerei.
In addition to the classic brandies, the distillery made a breakthrough on the market with its award-winning spirits. The Simons Bavarian Pot Still Whiskey and the rum from this small manufactory are also very distinguishable.


Meticulousness & love of detail
What makes a high-quality brandy? Where do the raw materials come from? What goes into the bottle and what does definitely not? How do you enjoy the distillate? And with what? Of course, with all tradition and quality, the mindful & sustainable use of nature's raw materials is also an important issue for us. Handicraft is a cornerstone of our philosophy. No control of any kind. No automation. Only the raw material and the skill of the master distiller. Simply more than just schnapps!
When the aromas rise to your nose and the first sip flows over your tongue towards the palate. For us, that's a moment full of happiness.
With every bottle that leaves our distillery, you can be sure that the noble drop was produced sustainably in careful manual work. A happy drop, you could say. That's what Simon's Feinbrennerei stands for. We maintain old traditions and refine our secret family recipes. We combine these treasures with our modern & innovative ideas, experimenting, trying and daring new things - always in search of good taste. And, we do not allow chemical mischief into our stills - out of conviction.
